Method

  1. Preheat the oven to 200C / Gas mark 6. brush a 20cm/ 8 inch square cake tin with oil.
  2. Sift the flour, salt and baking powder together into a bowl. Add the sugar and polenta and mix together. Rub the butter into the dry ingredients until mixture resembles fine breadcrumbs.
  3. Lightly whisk the eggs in a separate bowl. Stir into the polenta mixture and mix until thoroughly combined.
  4. Spoon the mixture into the prepared tin and smooth the surface. Bake in the preheated oven for 30-35 minutes. To check it's done insert a cocktail stick into the centre of the loaf and check to see whether it comes out clean. If it doesn't then the loaf needs a few more minutes.
  5. When cooked, remove from the oven. Leave to cool slightly for ten minutes but serve warm for best results.
